What To Eat At Michelin Star Chef Masahiko Yomoda’s Restaurants

Chef Masahiko Yomoda, also known as Chef Yomo is a 24-year veteran of the industry, best regarded for marrying refined Japanese techniques and flavours with his French-trained flair. His talent and passion extend beyond the commercial kitchen, with his mother, a Japanese pastry chef, and father, who worked in a European pastry shop. Chef Yomo grew up surrounded by fresh produce, so it comes as no surprise he’s mastered the art of technical cooking. This week, Masahiko is on Masterchef Australia, putting the contestants to the ultimate test in recreating his amazing dishes.

With a long and impressive resume in some of the world’s top restaurants including, three Michelin-starred, Alain Chapel, as chef de partie at Joel Robuchon, and as head chef at Restaurant Arbace in Tokyo, Yomo is well versed in all aspects of Japanese and European cuisine. He’s earned a Michelin star for his accomplishments, making him a highly regarded chef in the industry. 

In 2008, Chef Yomo took his talent to Sydney, starting at Observatory Hotel’s, Galileo restaurant in The Rocks (now The Langham). After a few more stints around Sydney, Yomo brings his inquisitive nature to two Melbourne restaurants. 

Ishizuka

This 16-seat Kaseiki restaurant delivers exceptional Japanese cuisine in an unsigned Bourke Street basement. Kaiseki is a Japanese art form practised only by the most experienced culinary masters. As Creative Director, Chef Yomo, honours traditional Japanese cuisine here, with the finesse of his French-trained hand. The dishes are prepared to order and are based on fresh ingredients available on the day. Enjoy the theatrics of an open kitchen, and the privacy of subterranean dining space. They also offer takeaway in the form of bento boxes, so you can enjoy the same haute cuisine at home. Each box features the highest grade Australian and Japanese produce, to feed a maximum of four people. The Sukiyaki option is another take-home experience, where you can savour A5 Kagoshima Wagyu, a wide selection of vegetables and mushrooms, and Sukiyaki sauce and sesame dipping sauce.

Tetsujin

Venture to the Emporium to find Tetsujin, a sushi train and Japanese BBQ venue, like no other. Firstly, sushi trains aren’t exactly synonymous with quality, and ordering off an iPad has never been regarded as high quality practice—yet, Tetsujin aims to rethink them both. Here, you can grab a fresh plate of sushi and sashimi at the train, or cook your own meats at the BBQ, and sip on cocktails at the bar. For the BBQ you order plates of raw Wagyu, Angus, beef, pork belly, and seafood to fry them on the table’s built-in Robata grill. Over at the train, sit down and grab whatever catches your eye, or order hot and cold dishes off the iPad. At the bar, feel free to take a load off, sip on sake, plum wines or make your way through the list of fun, and inventive cocktails.
