This Off-Grid Distillery Vows to Have a Carbon Neutral Whisky By the End of This Year

Two things we love right now, are whisky and sustainability.

Pair them together and what do we have? An off-grid distillery, producing Australia’s first-ever certified carbon neutral whisky. Yes please.

Located close to the Yarra Valley in Victoria is Kinglake Distillery, a relative newcomer to the whisky industry. Set up in 2018, their first single malt whisky was distilled at the end of that year.

And now, Kinglake Distillery has just announced its commitment to producing Australia’s first government-certified carbon-neutral whisky, which will be achieved by offsetting their carbon footprint, increasing the sustainability of their whisky-making processes and undertaking rigorous auditing.

They’re aiming to have this magical liquid ready to go by the end of this year, 2021, as well as setting aside land for the re-planting of indigenous native forest in their surroundings.

As is already apparent, Kinglake is different, and so is the whisky. There is no power, water, gas, or telephone lines to but instead, using a mixture of solar and generator power for electricity, a tank for gas and an onsite dam for recycling cooling water, making it completely off-grid.

It’s set upon deep forests, impenetrable bush, mountain streams, and national park, which not only makes it a natural haven but a really isolating and nature-focused location to produce new flavours.

Kinglake Distillery is specially designed to take advantage of its bush setting and rural location. Situated on top of the hill, one of the mountain streams rises on the property and runs almost all year round. 

Owners Sam Lowe & Chantal Daniels, hand make all their whisky in Kinglake, from scratch. 

They’re in close contact with the whisky from the moment they grind the malt until the new spirit fills the barrel and every element they use is completely local.

With the foundation of their whisky being water, their single malt is made from the mountain stream rising on the distillery property. The water has the perfect mineral content for making whisky—it’s natural, pure, and totally unfiltered, not to mention that 80% of the barley is farmed and malted in New South Wales and each grower is known on a first-name basis.

Rather than focusing on single cask releases, the couple behind Kinglake maintain a consistent line of the best malt they can make by vatting different barrels (typically small-format ex-bourbon barrels re-coopered in Australia). Smaller casks are perfectly suited to ageing conditions in the Kinglake Ranges.

Nature influences every stage of the whisky distilling process, and the result is a unique and special whisky that can only be made in one place, giving it the ultimate story.

Distilleries like Kinglake, are hopefully the future of Australian spirits. Sam and Chantal foster a strong brand ethos centred around authenticity, honesty, and integrity.

If they manage to get this carbon-neutral whisky up and running, Kinglake Distillery will undoubtedly become a genuine Victorian distilling landmark and give it even more appeal as a must-see destination for top-notch booze.
