In 2020, the Three Blue Ducks team launched Oma, an intimate wine bar in Byron Bay. Since then, Oma is known for its trendy, late-night, snack heavy character, and its collaboration series, which invites chefs, producers, and winemakers to take over the venue for one night only, but their guest menu will live on in the venue for a full week.
This Sunday 18 April, Oma is set to host its second instalment of Oma and Com with Chef Casey Wall, from Melbourne’s much-loved Bar Liberty, Falco Bakery, Capitano, and Above Board Bar. The series debuted with Sydney based chef, Luke Powell (LP’s Quality Meats) in March, followed by Casey Wall.
Having worked together previously at Rockwell & Sons and Bar Liberty, Casey and Oma’s own head chef Mark Hannell will team up again to present a combined set menu for $75, showcasing the best of their Byron Bay and Melbourne based venues.
“Casey was an incredible mentor and friend to me during the time I worked under him at Rockwell & Sons and Bar Liberty, so I can’t wait to get back in the kitchen with him and see what he creates”, says Hannell.
“I know all too well what an amazing chef he is—so we’re definitely in for a great night”.
The menu will highlight Casey’s cult-favourite dishes of raw beef with caramelised onion and dijon from Bar Liberty and vodka rigatoni from Capitano. Rumour is, the charred cabbage with savoury yeats and caraway from Bar Liberty is on the menu. Diners will also find a selection of Oma favourites from Hannell.
All dishes will be available as part of the a la carte offering and will remain on the menu for the week to follow. Enjoy Oma’s full beverage list too, including the female-led natural wine list curated by Group Beverage Manager, Mem Hemmings and a special Pennyweight X Bar Liberty Palomino blend wine available for the evening.
It wouldn’t be a collaboration without having something to take home. Diners will be able to purchase merch includingtee’s from Bar Liberty and Capitano, alongside Casey’s famous ‘chicken flour’—a secret blend of flour and spices used in his fried chicken recipes, which he sold through Falco Bakery for the first time during the 2020 lockdowns.
While tickets aren’t required for this event, you will need to book a table to secure the set menu experience.Â
Continuing as a monthly series, additional guest collaborators will include Alana Sapwell (of Noosa-based Esmay) & Venetia Scott (Hungry Earth Agroecology) in May and Adam James (Rough Rice) & Luke Burgess (Chef & Photographer) in June.
